Very Berry Baked Oatmeal

Hello people! :D It's Sunday! Another week has past super quickly and September is approaching. (: School's gonna start really soon, but in the mean time, I shall enjoy my remaining holidays.

This flavour was inspired by the days I was working in Cold Stone Creamery. They had this signature creation of very berry, which is a mixture of 3 types of berries - strawberries, blueberries and raspberries. I decided to swap strawberries for blackberries because I couldn't get my hands on strawberries x.x But do feel free to swap it back to strawberries if you prefer that over blackberries! :D


Ingredients:
Rolled oats, around 40g
Milk (enough to cover the oats, you could add water to fill it up)
Applesauce (1 TBSP)
Cinnamon (a dash)
Assorted berries - as much as you want (:

Method:
1. Preheat oven to 180C
2. Combine rolled oats, milk (or milk+ water), applesauce, assorted berries and cinnamon in a bake safe bowl
3. Bake in preheated oven for 20-25minutes
4. Top with more berries to serve (:

Key Lime Baked Oatmeal

Hello! :D We're more than half way through August, time really flies (: In awhile more, its going to be Christmas! The happiest time of the year (: It would be perfect if it snows. But in any case, it's still perfect because I've got my loved ones and friends with me (:

I've never thought that lime and coconut would go so well together. Halfway through baking, I could already smell the warm coconut through the kitchen and the tangy lime zest is so refreshing. It's such a good mixture of smell and taste that I couldn't believe that it's Monday. Haha.


Up close - love the coconuts!

Ingredients:
Rolled oats, around 40g
Milk (enough to cover the oats, you could add water to fill it up)
Lime juice (1/2 TBSP)
Desiccated Coconut (~2 TBSP + more to top)
Cinnamon (a dash)

Method:
1. Preheat oven to 180C
2. Combine rolled oats, milk (or milk+ water), lime juice, desiccated coconut and cinnamon in a bake safe bowl
3. Bake in preheated oven for 20-25minutes
4. Sprinkle with more dessicated coconut and cinnamon to serve :D

Carrot Cake Baked Oatmeal

Just a really simple recreation of the favourite carrot cake (the baked one, not the fried one. lol) into an oatmeal version :D Really liked how this smelt when it's baking. (:

Ingredients:
Rolled oats, around 40g
Milk (enough to cover the oats, you could add water to fill it up)
Apple Sauce (2 TBSP)
Shredded carrot (~2 TBSP + more to top)
Cinnamon, as much as you like plus more to sprinkle! :D

Method:
1. Preheat oven to 180C
2. Combine rolled oats, milk (or milk+ water), applesauce, shredded carrot and cinnamon in a bake safe bowl
3. Bake in preheated oven for 20-25minutes
4. Sprinkle with more shredded carrot and cinnamon to serve :D

Honey Ginger Lemon Baked Oatmeal

HELLO PEOPLE!! I'M FINALLY BACK FROM MY NEWCASTLE TRIP!! :D Haha. There wasn't any rolled oats there so I couldn't bake oats ): Missed it so so much while I'm there! It was nonetheless a great experience there despite the not-so-good food with all the lovely people and weather (: If I have the chance (and money), I wouldn't mind a second visit :D

Sadly, the first morning back in Singapore I was greeted with a thunderstorm. Was hoping for clear blue skies like what I've been experiencing over there. Haha. But oh well, thunderstorm will not dampen my mood for my long missed oatmeals! I made myself a warm honey ginger lemon baked oatmeal to cheer myself up (:

The warm ginger tinted with slight sourness and topped with the sweet honey.... What else could taste as homely as this? (:


Ingredients:
Rolled oats, around 40g
Milk (enough to cover the oats, you could add water to fill it up)
Lemon juice, 1 TBSP
Shredded ginger, 1 TBSP
Honey, 1 TSP (and more to drizzle)
Lemon zest, to top

Method:
1. Preheat oven to 180C
2. Combine rolled oats, milk (or milk+ water), lemon juice, ginger and honey in a bake safe bowl
3. Bake in preheated oven for 20-25minutes
4. Sprinkle lemon zest and drizzle honey over oatmeal to serve (:
