Red Velvet Baked Oatmeal

I swear I did not plan this oatmeal to be red and blue to celebrate independence day. But since it is, happy early independence day (:

Today was a rather scary day, but I'm glad I had red velvet to tide me through (: I'm starting to like and appreciate the taste of beetroot! This all-natural baked oatmeal got its colour from beetroot and I'm surprise how amazing it looks. It doesn't look artificial like red colouring, and has this natural red tinge to it. Super pretty (: The picture does not do any justice to it.

Taste wise, beetroot does not have much taste, or it may be due to the amount of cocoa powder I've added. Haha. However, it's not super chocolatey like a chocolate oatmeal. It's more like red velvet (: I topped it with blueberries because I love how the blueberries burst in the mouth. I spread a thick layer of cream cheese on top before every bite, to compliment the red velvet taste, and it really taste like red velvet cupcakes with cream cheese frosting, minus all the fats and sugar (:


Ingredients:
Rolled oats, around 40g
Milk (enough to cover the oats, you could add water to fill it up)
Beetroot juice*, around 2-3TBSP, depending on how red you would like the oatmeal to be. I used around 3TBSP
Cocoa powder, around 1TBSP
Cream cheese, to top
Blueberries or other fruits to taste

Method:
1. Preheat oven to 180C
2. *Dice beetroot and blend with around 1/2 cup water and strain the pulp to get the juice
3. Combine rolled oats, milk (or milk+ water), beetroot juice and cocoa powder in a bake safe bowl
4. Bake in preheated oven for 20-25minutes
5. Spread with a thick layer of cream cheese and sprinkle blueberries or other fruits to your liking (:

Strawberry Cheesecake Baked Oatmeal



Found this picture in my instagram and realised I haven't posted recipe for this! It's a really simple combination with my favourite ingredients - Strawberry and cheese. The sweet chunky strawberries in warm creamy oatmeal topped with chilled, lightly
salty cottage cheese. This combination is simply delicious.

Ingredients:
Rolled oats
Milk (enough to cover the oats, you could add water to fill it up)
Chopped strawberries (I like them in chunky cubes)
Cottage cheese - as much as you like
More strawberries on the side

Methods:
1. Preheat oven to 180C
2. Combine rolled oats, milk (or milk+ water) and strawberries in a bake safe bowl
3. Bake in preheated oven for 20-25minutes
4. Spread cottage cheese across baked oats and top with more strawberries
