Honey Ginger Lemon Baked Oatmeal

HELLO PEOPLE!! I'M FINALLY BACK FROM MY NEWCASTLE TRIP!! :D Haha. There wasn't any rolled oats there so I couldn't bake oats ): Missed it so so much while I'm there! It was nonetheless a great experience there despite the not-so-good food with all the lovely people and weather (: If I have the chance (and money), I wouldn't mind a second visit :D

Sadly, the first morning back in Singapore I was greeted with a thunderstorm. Was hoping for clear blue skies like what I've been experiencing over there. Haha. But oh well, thunderstorm will not dampen my mood for my long missed oatmeals! I made myself a warm honey ginger lemon baked oatmeal to cheer myself up (:

The warm ginger tinted with slight sourness and topped with the sweet honey.... What else could taste as homely as this? (:


Ingredients:
Rolled oats, around 40g
Milk (enough to cover the oats, you could add water to fill it up)
Lemon juice, 1 TBSP
Shredded ginger, 1 TBSP
Honey, 1 TSP (and more to drizzle)
Lemon zest, to top

Method:
1. Preheat oven to 180C
2. Combine rolled oats, milk (or milk+ water), lemon juice, ginger and honey in a bake safe bowl
3. Bake in preheated oven for 20-25minutes
4. Sprinkle lemon zest and drizzle honey over oatmeal to serve (:

Blueberry Lemon Baked Oatmeal

The haze is finally clearing! :D So happy to see the sun and breathe fresh air again. We should really cherish what we have and not take things for granted, even down to the most basic things like air. (:

Been working quite a bit at Real Food Cafe recently. I like it there, it has a very homely feel to it. Although most of the time im washing or drying dishes, im actually enjoying it. Haha. A change from the usual I guess. It's good training for me too, since I'm going to be alone in UK and there's no one to wash my dishes. :X haha.

Ok, so here's the recipe for Blueberry Lemon Baked Oatmeal. Really simple, but taste so good. The combination is surprising good! The sweet and sour taste of blueberries and lemon with the salty cottage cheese. Really good (: But again, what could go wrong with blueberries and lemons? (:


Ingredients:
Rolled oats (I measured my oats this time, around 40grams)
Milk (enough to cover the oats, you could add water to fill it up)
Blueberries (as much as you want)
Lemon juice (1/2 a lemon)
Lemon zest and more blueberries, for topping
Cottage cheese, for topping

Method:
1. Preheat oven to 180C
2. Combine rolled oats, milk (or milk+ water), blueberries and lemon in a bake safe bowl
3. Bake in preheated oven for 20-25minutes
4. Sprinkle more blueberries, lemon zest and spread cottage cheese when eating
