Passion fruit Baked Oatmeal

The first time I had my encounter with passion fruit was during my Final Year Project in poly days. Before that, I had no idea what passion fruit was. I've always thought passion fruit was purple for unknown reasons, but turns out, passion fruit is nowhere close to purple. Haha.

And that was also when I fell in love with passion fruit. The sweet and sour taste of the juice with the crunchy seeds. It's such an exotic fruit, different from the usual soft or crunchy fleshy and juice bursting ones. It's nonetheless lovely and delicious.

I've actually mixed passion fruit into my usual stove top oatmeal before, but somehow, the baked ones makes it taste even better.


Ingredients:
Rolled oats, around 40g
Milk (enough to cover the oats, you could add water to fill it up)
Passion fruit (as much as you want, I used 2 passion fruit worth of seeds and pulp)
Apple sauce, around 1TBSP
Cinnamon, to taste

Method:
1. Preheat oven to 180C
2. Combine rolled oats, milk (or milk+ water), passion fruit, apple sauce and dust cinnamon on top in a bake safe bowl
3. Bake in preheated oven for 20-25minutes
4. Top with more passion fruit and cinnamon when eating
